Easy Homemade Dragon Fruit Health Enzyme For Drinking & My Review Of This Enzyme

Ah, finally…. I am posting my recipe for making enzymes for drinking. All thanks go to my blog visitor, Jessica, who so graciously shared with me her recipe for making drinking enzymes at Comment # 14 at my cleaning enzyme post HERE .

I did some reading over the Internet to find out more on drinking enzymes .

4) here, from Cooking Momster - this site has some background on a Chinese recipe for fruit enzymes using “San Cha” used to make Haw Flakes. There are some interesting recipes there as well as the benefits of the various fruit enzymes. :wink:

Different sites have different information on the recipes – like how much fruit in proportion to sugar/honey, when to shake the enzyme during fermentation, how long to wait before harvesting enzyme (period ranges from 2 weeks to 6 months), and how to take the fruit enzyme for health.  So, I would suggest that you gather as much information as you like on the Internet before you start making your own enzymes.

In general, it was reported that drinking fruit enzymes improves our vitality, ensures regularity in our bowel system, aids in digestion and enhances body absorption of nutrtients.

Initially, I was going to buy a large glass jar to prepare the enzyme in, but at the last minute, I decided that I would just use the inner pot of my slow cooker  - the reason being, I didn’t know how much of liquid enzyme would be yielded and I wanted to get the size of the jar right. :idea:

I covered my crockpot with the glass lid and a piece of aluminium to keep out the light. Beside it is a new glass jar that I had bought to prepare more Fruit Enzyme the next time.

Some tips to share with you :-

  1. make sure that the fruits, chopping board and knives are completely dry as even a drop of water can spoil the enzyme. I washed them thoroughly and left them to dry overnight. But, if you are rushed for time or you find that your items are not 100% dry, do like what Jessica does – she uses a hairdryer! :wink:
  2. as you cut your fruits, it is best to place them straight in the jar – this is to ensure that the fruits are not contaminated or exposed to fruit flies
  3. you have to use a glass jar for safety reasons because we are going to drink this enzyme.  If plastic bottles are used instead, it is feared that the fermentation process may leech out some unhealthy stuff used to make the plastic bottles
  4. the fruit enzyme needs a dark, cool place to ferment. You can also wrap a piece of aluminium foil or an old t-shirt or cloth around the glass jar
  5. shake or stir the fruits often to prevent build-up of a whitish mould at the surface. Don’t worry, the mould is safe and is a sign that fermentation is well underway.
  6. if black spots or black moulds are seen, it would mean that the fruit enzyme is contaminated. Some people recommended that the black moulds be scooped out and the fruits left to ferment further. For me, I would prefer to throw the whole batch away and start a new one, for fear of food poisoning  from the contamination.
  7. upon harvest, pour the liquid enzyme into old, clean wine bottles. The leftover fruit can be used as jams, or it can be fermented further to be used as a facial wash or plant fertiliser. I gave half of my fermented fruit to a friend, and the other one is kept in the fridge to eat as a jam with my toasts.

Because 2 of my dragon fruits were over-ripe and there were some worms inside (I am terrified of worms :shock: ), I had a paranoia that my other fruits may have eggs that will turn into worms! :lol: So, I decided at the last step of the preparation to add 1 cup of apple cider (I thought that should kill anything inside and of course, I had thrown away the worm infested fruits!) and for added fragrance and to cut down the sugar level, I replaced one cup of sugar with Australian honey. :idea:

I had read that the apple cider will speed up the fermentation process, and that was also another reason that I added the apple cider.

My Dragon Fruit Enzyme ready to be harvested – 2 weeks after preparation :D

My Dragon Fruit Recipe

3 kilos or 6 1/2 pounds of Pink Dragon Fruit

8 lemons

1 kilo or 1 3/4 pounds slabs of brown sugar (or loose brown sugar)

1 cup apple cider

1 cup honey

Method

Remove skins and cut to slices about 1 cm or 1/2 inch thick

Arrange dragon fruit starting at the bottom, alternating with slices of lemon and sugar

The last layer at the top must be sugar

Pour apple cider and honey over everything

Cover and keep for 2 weeks, shaking gently the contents in the first few days, and stirring thereafter occasionally

The fruit enzyme was harvested exactly 2 weeks after preparation and there was just enough to fill 2 wine bottles. Half a bottle was consumed immediately for a few days, while the rest will be left for a further duration until 4 to 6 months, with a taste test at every 2 weeks.

In a few days, my enzyme will be exactly 1 month old, and I will see how the taste goes.  A website had mentioned that the ph of the enzyme improves over time, especially after 4 months. I’m not sure exactly what that meant and I just assume that the enzyme will not be so acidic after a longer period. I guess it is like wine, which tastes better over time! :lol:

Also, new enzymes are more alcoholic in nature and some websites do not recommend that the enzyme be consumed at this stage because the alcohol is not good on the liver. My opinion is the new enzyme should be fine for consumption as we are not drinking large amounts of it enough to damage our liver. We are just having 2 to 3 tablespoons a day as a tonic for our health. :wink:

The 2-week old fruit enzyme tasted like a mild apple cider mixed with alcohol, with a hint of apple cider and honey. My children hated the taste of it and I had to tell them to pretend that it was Ribena! Anyway, they never liked apple cider either! :lol:

It is best to drink the enzyme first thing in the morning on an empty stomach, rest for half an hour before taking breakfast. I mixed the enzyme with  2 times its amount of room temperature water. For me and my second daughter, the dragon fruit enzyme tasted absolutely delicious – like a fruity wine! It didn’t smell bad or rotten at all as I had thought it to be.

The period that we consumed the dragon fruit enzyme (5 days all in) was too short to notice any significant improvement in our vitality and health. But all of us reported easier and better bowel movements, as if the enzyme is removing toxins faster from our bodies. Another reason why I stopped drinking the enzymes after 5 days was because I developed a mild food poisoning from eating some bad curry at a mamak shop. My husband and second daughter continued to take until 1 week and they didn’t report and adverse side effects in their health.

In summary, I would definitely recommend to everyone that they should try to make some fruit enzymes to drink. I think the enzymes will do more good than harm. I have seen some stalls at the TTDI pasar (markets) selling the homemade dragon fruit enzyme for RM39 (USD10) for a 750ml bottle. My cost was only half of that and by making my own enzyme, I can be sure that I use good quality fruits and there is hygiene in preparing them.

My next post will be how to make our own rice enzyme for washing dishes. A friend gave me a bottle to try and it is really effective in cutting grease!

    This method reminds me of an Amish Friendship Fruit Starter. It is made in a crock pot also and replenished over a period of time. I can’t remember the details right now but I know I have seen this method used before. I think the fruit is also used in a cake batter. I will have to check.

      Thank you so much for sharing the information regarding the Amish Friendship Starter – that is so interesting. I would love to hear how the Amish use this fruit in a cake batter – because I have a large tub of it sitting in my fridge now and I am making another batch of drinking fruit enzyme tomorrow (using apples, oranges, lemons, pineapples and honey) and soon, I will end up with a lot of fruit pulp again! :lol:

      Also, thank you for your kind comments. :oops: In Malaysia and Singapore now, we are having a craze in making enxymes for health and cleaning, and therefore we are always on the lookout for new ideas in this technique. Bottles of the drinking fruit enzyme are being sold at exorbitant prices, some as high as USD20 per 750 litre bottle (size of a wine bottle), so it is best if we can make some ourselves.

    It has been 2 weeks since my husband and I started on a daily morning dose of the dragon enzyme when it was 1 month old. Its taste is more mellow and not as fruity tasting as it was when we took it at 2 weeks old.

    Good news though – my husband is very impressed with the goodness of this enzyme. He reported much improvement in his health and vitality. He feels so much better these days, he said.

    My husband leads a sedentary lifestyle with almost no exercises and he smokes. I have been feeding him many types of natural remedies to maintain his health but this is the first time that he readily admits that a health remedy, the dragon fruit enzyme, has made a great improvement to his health.

    I’m so sorry it took so long to get back to you. I was hunting through my cookbooks this past week while I was in Pennsylvania to see if I could find out more about the Amish Friendship starter. I know it is somewhere but since I am still between homes, the week got away from me before I could find it. I did however talk to an Amish women at the town square farmer’s market. I told her about your Fruit Health Enzyme and would you believe, she actually had the general idea of what I was talking about! Thank goodness I actually read what you write LOL. I think she understood the concept and it almost sounded like the Amish may have something quite similar. Anyway, she said she puts the fruit in a crock and adds hard cider and lets it ferment. She told me I could use brandy if I preferred. I really have to get the details worked out. I’m so sorry I couldn’t be of more help. Perhaps, an internet search for Amish starter will offer more details.

    I read what you wrote about your husband liking the drink. I’m sorry to say, I have a few of his vices. I better get on drinking!!!

      My dragon fruit enzyme liquid form is normal – a dark, rich maroon-purplish colour with a texture like red wine.

When I was reading up several sites on how to make drinking enzymes and how good the enzymes were for health, I was wondering if they will work for me and my family as well.     I don’t think there is scientific research on homemade drinking enzymes to back those benefits up, but they were obtained mainly from the enzyme drinkers’ experiences.

    So here, I would like to share mine as well :-

    1) LOSE WEIGHT & SLIM DOWN

    Heheh, I am writing this first because I know many people would be absolutely thrilled to know that there is an easy way to slim down without exercising nor dieting. I am now sure that fruit enzymes can help us to lose weight because I am seeing it happening to my husband. For the past 10 years, his waistline and weight has been increasing steadily and he kept having to get new, bigger pants made! :lol:

    Wow, last week, he told me to get him his older pants to wear as the present one was getting too lose around the waist! How wonderful! His pot belly is slowly but sure decreasing in size! :D

    In case you are wondering, my husband is the perfect “guinea pig” to try the fruit enzymes on because he is overweight, he smokes, he doesn’t like to exercise nor go on a diet, and he likes to have his daily, happy hours’ dose of beers. :roll:

    That means with everything remaining at a constant (unchanged) like his food intake and amount of exercise, the fact that he actually lost inches off his large waistline could only meant that the fruit enzymes worked in helping him to lose weight!

    Now, I am waiting to see if I need to dig the older pants for my husband to wear later…I certainly hope so. :lol:

    For me, for some reason my very flabby underarms (part of hitting middle age…we develope “wings” :lol: ) have become smaller and tighter in size. I was so surprised. I also did not have any change to my lifestyle…same amount of daily food intake, same amount of house chores as exercises…in fact, my family had even gorged on yummy, high caloric Hari Raya Rendangs and Ketupat! Only thing was, I started drinking enzymes first thing in the morning.

    Now, even my children are now on drinking enzymes – my daughters needed to lose some weight, while one of my son has to put on some weight. Otherwise, I wanted them to have more vitality and energy actually to cope with their school work. Hmmm….I wonder if the enzymes will help to boost brain power? :lol:

    I have made my 4th batch of fruit enzymes to drink by now – the first was this post. The others being :-

    2) apples/pineapples/oranges/lemons/Hawthorn Berries

    3) apples/lemons/beetroot

    4) back top dragon fruit/lemons that I made yesterday

    I will write on the vitality part tomorrow.

Last week, I bought a book on how to use enzymes for healing and losing weight and it was written by a doctor. I will write briefly about it here as soon as I can (heheh, presently busy “babysitting” and toilet training a Beagle puppy :roll: ).

      Now, we are telling all our friends to make this enzymes at home to drink because of its wonderful benefits. I noticed that the acne problem for my second daughter is finally gone after she has been having acne for 5 years! Also, my 2 younger teenage boys who had terrible acne are also seeing improvement in their complexion! These days, our facial complexion is more clear, radiant and glowing…also very fair! :lol:

    both are made of the same kind of fruits but the color is different.
    the color of the 1st bottle is very light with really very very little bubble at the bottom, the 2nd bottle is brownish color with more bubbles.

    btw how do we know if it’s successful?

      I’m not exactly sure but I am guessing that the 2nd bottle with more bubbles and darker in colour means that somehow the fermentation process is taking place faster. It should be alright if there are no black moulds growing as the whitish bubbles (if we don’t wet the top layer everyday) on the surface will turn into white mould (a normal sign of fermentation in process).

      A few days ago, I made a new batch of drinking enzyme (my 5th batch) using large yellow pears…I was told that yellow pears are good for the lungs and in removing heatiness from the lungs and in general. I was surprised that this time, there was a lot of bubbling and foaming on the surface…but then, this time, I had put in 2 cups of apple cider instead of 1. So, I guess the fermentation process is much quicker, hence more bubbles.

      Hope this helps to explain things a bit….

      P.S. The only way we know our enzymes are successful is when there are no unusual black fungal growth or bacteria growing and when we drink the enzymes – after at least 2 weeks, we should see some improvement in our energy levels (vitality) and bowel movements. After 1 month, our facial complexion has a rosy, clear, glowing look! :D

    the second bottle has some bubbles but the 1st bottle don’t have and the color was still light so 3 ago i decided to add more sugar and 2 days later there’s lots of bubbles and color change too but but… a few pieces of the fruits lemon and apple change color :( probably because i shift it abit to put the sugar. anyway, hopefully it’s still ok.

      The sugar content from both the fruits or sugar/honey will determine the rate of fermentation, so in your case, you did right in adding more sugar. Most of the recipes that I had read to prepare this enzyme had varying amounts of sugar/honey, so it is up to us to adjust the sugar level when making more batches of enzymes later. However, for drinking enzymes, more sugar means also more alcoholic content…unless the enzymes are kept for a longer period (at least 1 month). :wink:

    You mentioned in the making the drinking enzyme the last layer should be lemon, however, I read in a book the last layer should be the sugar (which gives the fermentation). Just wanna clarify if there is a typo error… ;p

      Yes, the enzyme will still ferment if there is not enough sugar…just that the fermentation rate will be slower. For the garbage enzyme, I had some yeast leftover from making bread – it is instant yeast with the “Mauri-Pan” and costs around USD 30 cents a packet. :wink:

    I m very pleased that the 5 benefits that you’ve experienced and posted on 2 Oct are exactly same as mine. That proves it that with regular intake of enzyme drink everyday, we can achieve good health, vitality and the bonus – radiant complexion. This is what we, middle age women, could ever dream for. :-)
    If you don’t mind me for being a busybody, I would like to share my view with Jo. She had made 2 bottles of the same fruit enzyme but with diff results. There are 2 possibilities ( or maybe more) – 1) sugar content ( you’d ans). 2) air- from my experience, it could be that she closed the lid too tight hence less bubbles. That affects the rate of fermentation.

      Heheh, I now have a glowing, radiant facial complexion and these days, I don’t even have to use a blusher/rouge on my cheeks, I have rosy cheeks! :lol:

      I’m so glad you encouraged me to drink the enzyme earlier and now, my whole family is benefitting from it. Hey, no need to apologise for not revealing the benefits of drinking enzyme, you wanted to be sure of them first. :wink:

      My 2 teenage boys who used to have very bad acne are now seeing their acne clearing up. My 18-year old daughter who had bad acne since she hit puberty now enjoys a glowing, very fair and flawless facial complexion.

      Another health benefit which I have yet to mention is that drinking fruit enzymes help to eliminate back/spinal pains – I read about this in a brochure marketing dragon fruit enzyme and my husband used to have chronic lower back pain if he sits at the computer for too long (he’s in the IT line). So, I asked him last week if he noticed any changes to his back pains – he told me he doesn’t get them anymore! Wow! How fantastic!

      I have another experience which I couldn’t confirm with anybody but I felt that my limbs/joints are more flexible these days….last time, I can’t cross my legs comfortably without pain in a lotus sitting position, but these days, I can bend my knees fluidly and easily.

      I also found out that red dragon fruits and beetroots are very good in preventing cancer and are high in antioxidants – I happened to make a large batch of them (6 bottles) and we are drinking that right now. By next week, my round yellow pear enzyme will be ripe and we will switch to that once the dragon fruit/beetroot enzyme is finished…I was told yellow pears are very good for our lungs and in removing general heatiness and lung heatiness. A good enzyme to take in view of the A 1H1N1 Flu going around now. :idea:

      I also want my family to take apple cider on a daily basis and so, I have been adding about 2 cups of apple cider plus 1 kg of honey to 6 large red dragon fruits and 12 lemons. I use the leftover enzyme from a previous batch (about 1/2 cup) to speed up the fermentation process.

      The latest batch of enzyme I made has about 14 very large round yellow pears from Korea, 1 cup San Cha (Hawthorn) soaked in 2 cups of apple cider, 1 packet tube hard brown sugar (I was afraid the enzyme may be too sour), and 1 kg of honey (I used the CED brand bought from Giant as the honey is claimed to be harvested from the forests of Indo China…I don’t use China honey because I read somewhere that their honey contains corn syrup). I am going to harvest this enzyme in a few days and this time round, the alcohol smell is very strong…hope it is not too unbearable to drink. :lol:

      I usually use non-organic fruits although I must say that the organic ones have more flavour and have less pesticides. I got my glass jars from those shops that sells plasticware, houseware and cooking utensils…I can’t tell how big it is but I paid RM20 for it. A few weeks back, I got another larger one for the same price….I estimate the jar to be about 6 to 8 inches in diameter and about 16 inches tall.

      Let me know how your eczema goes with drinking the enzyme, hope it will clear up. :wink:
