Greetings and a Happy Saturday to you, dear friends
Yesterday was my husband’s birthday and I was busy for a few days preparing for his dinner feast. By the time I had finished cooking and we sat down to dinner, I was just too exhausted to take the photos of what we had and my daughters took some just so that I can put them here. Nevertheless, it was well worth the effort of cooking this dinner as my husband and family went crazy over the food. Hehe, as I am typing this, my husband and sons are now eating some of the leftovers for tea time and watching a movie on TV!
Rolled Smoked Salmon (Gravad Lax from Ikea)
Chopped Onions, Mashed Hard Boiled Eggs, & Caviar (to spread on toasts and Ritz cheese crackers)

Baked Potato Skins with bacon bits, strong cheddar & mozarella cheeses, chopped green onions
Roasted Potato Wedges (Chad Potatoes that were quartered and simmered for 10 minutes in 1/2 cup of water in a pan with bacon bits and some soy sauce; then roasted with some smashed garlic cloves in oven for 40 minutes). This went with some marinated Lamb Chops and grilled Beef Steaks.
A simple DAIM cake from Ikea (a scrumptious almondy cake with butter cream and chocolate bits)
In addition to the above, I had prepared some guacamole dips, sour cream, refried beans and tomato salsa for nacho chips; and there was a plate of green salad with Thousand Island Dressing for everyone. By the time we had finished eating our appetisers, we only had a little room left for the main course which was Lamb Chops with mint sauce, Beef Steaks and Roasted Potatoes.

It was just the 6 of us in the family plus my eldest daughter’s boyfriend….cos if I have to cook for more people, I think I will be “under pressure to cook well”. Hehe, this way, in case my recipes didn’t turn out well, I have my well trusted “guinea pigs” who would eat anything!

This was for last year…..this year, I was down with cough and cold and I didn’t cook anything for his birthday.
We ended up going to a Japanese Restaurant to celebrate for him.
