Roast Chicken Malaysian Style

Hello there, dear friends :D

Last week, I sort of got “winded” from cooking and decided to stick to really simple recipes that didn’t require me to slave over a hot stove for a long time – the weather was too hot and humid for that anyway. During times like that, I’d be sure that I have a nourishing soup simmering away first and the rest of the dishes for dinner are either a steamed, stewed, braised, stirfry or roast dish – all served with hot white rice.

I have not made this Malaysian style roast chicken for a long time and since I did, I thought I would post the recipe here. It’s really easy to do but it is delicious, and it is best if the chicken is marinated overnight……otherwise, like I have mentioned a few times before, just give your chicken a longer massage! :lol:

Ingredients -

1 whole chicken, split up butterfly style (cut at the breast and opened up to lay flat)

5 cloves garlic & 1/2-inch fresh ginger, skin removed and pounded to a paste

3 tbsps soy sauce

1 1/2 tbsp salt

1 tbsp sugar

1 tsp black pepper

1 tbsp turmeric powder

1 tbsp cumin powder

1 tbsp coriander powder

* Optional (but I didn’t put these in this time round) – some chili powder or paste, coconut milk, or chopped up lemon grass

Method -

1) Clean chicken and wipe dry with paper kitchen towels.

2) Marinate chicken with all the ingredients for a few hours.

3) Lay split-up chicken skin side up in a baking tray. Pour the marinade over it. Brush skin with a little oil (if you have some fried shallot or garlic oil, it’s even better as the chicken will be more aromatic)

3) Bake in a preheated oven at 180 degrees Celcius or 350 degrees Fahrenheit, basting with marinate and oil occasionally.

4) Bake for about 30 minutes and then turn off the oven, but leaving the chicken inside to finish cooking for another 20 minutes.

5) When cool, cut into serving pieces. Remove some oil from the roasting pan and spoon some chicken juices/gravy over the chicken. Put the rest of the gravy in a small bowl to be served with the chicken.

There you have it, an easy roast chicken a la Malaysian style! Bon Appetit! :D

    How’s the new rice cooker going? Any new recipes to share?

    So, hot for you too? We are heading into the high 30’s again this week, and it’s as dry as a bone. So tiring. You are right about the energy in the kitchen dear – it feels wonderful!:)

    Wow, I could smell your aromatic chicken rice all the way here! :lol: My Malaysian roast chicken will go well with chicken rice too, with some sliced cucumbers and homemade ginger-garlic-chili sauce on the side.

    The weather was so hot at the beginning of last week and then it has been raining so much for the last few days. :roll:
